Microwave Breadless Pudding





4 oz. cream cheese
1 egg
4 T. heavy cream
1/2 t. vanilla
Pinch of salt
1/4 c. Splenda

Soften cream cheese in microwave until not quite melted.  Beat egg, cream, vanilla and salt together in a separate bowl with a fork. Add to softened cream cheese. Beat together with fork until most large lumps are smooth.  Stir in Splenda, mixing well. Microwave for approximately 2 minutes, or until set like custard.

  1. Thank you so much for posting this recipe! It is the absolute best thing I have eaten since being on a low carb diet. I made your recipe as directed, and it was so good, that today, I am trying it with almond extract. I plan to also make it with lemon extract and see how that turns out.

    1. I just discovered this recipe and am trying to figure out how many net carbs this is. I entered the recipe that converted it to a nutrition label. Am I supposed to be subtracting “sugars” (I used Splenda) from the net carbs?

  7. I don't know Jessica, I only made it a few times but it never turned out badly. The only I can think of is maybe the cream cheese wasn't melted enough to mix together smoothly with the egg. Maybe you need to melt it down more and then really beat it good with the egg.

  8. I'm eating mine as I type. I can honestly say that it's the best recipe I've tried since I started Keto in Jan. Thoufh I'm eating it while it's still hot, will it taste better after a night of chilling? I know when my wife makes cheesecakes, they taste good out of the oven, but 1000 times better the morning after.

  10. Ok I *just* made this and it is sooo good! Mine turned out perfectly, not like scrambled eggs at all. I think perhaps the person who wound up with a scramble probably didn't get the cream cheese and eggs blended well enough and may have overcooked it. I topped mine with a sprinkle of cinnamon *yum* Thanks so much!!

  16. I just made this and am letting it cool, but I have a question.... Yours looks really smooth on top, mine puffed up in the microwave, so I was just wondering.. Is it supposed to puff up?

  17. I was so happy to see this it was quick and easy! This was absolutely amazing I added a tablespoon of sugar free caramel syrup and a few shakes of cinnamon...I also had it both warm and cold and prefer it warm! So happy I found this recipe thank you for sharing!

  18. Wow, this sounds amazing...but it is like over 600 calories and while counting calories on keto/low carb isn't something to focus on they still do count in reality. If you eat this delish recipe too often it could be problematic, especially for those concentrating on weightloss. But as a special treat, YUMMMMM & thank you!
